Plateaux/plateaus are both allowed--I don't know what's more common in non-British Englishes. But I prefer to think that it's a pun from Massumi: it's a verb. A multiplicity condenses onto a plane, which is a pretty good description for the book itself, after all. Any thoughts yourself?
